Savory Mushroom Muffins

Ingredients:

  • 1 cup finely chopped mushrooms (such as cremini or button mushrooms)
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon dried thyme (optional)
  • 1/2 cup grated cheese (such as cheddar or Parmesan)
  • 1/4 cup finely chopped onion
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1 large egg

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

  2. Sauté Mushrooms: In a skillet over medium heat, sauté the chopped mushrooms and onions in a bit of olive oil until they are soft and the moisture from the mushrooms has evaporated, about 5-7 minutes. Set aside to cool slightly.

  3. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, pepper, garlic powder, and dried thyme.

  4. Combine Wet Ingredients: In another bowl, mix the milk, olive oil, and egg until well combined.

  5. Add Mushrooms and Cheese: Stir the sautéed mushrooms, onions, and grated cheese into the dry ingredients.

  6. Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix just until combined. The batter will be somewhat lumpy, but that’s okay.

  7. Fill Muffin Tin: Spoon the batter into the muffin tin, filling each cup about 2/3 full.
